Meat Free Monday: Nanny’s Old-Fashion Baked Macaroni and Cheese

Ever have one of those dishes that just seems to become your signature dish? Well that’s what Nanny’s Old-Fashion Baked Mac and Cheese has become in our family. It’s one of those dishes that if we’re having a dinner gathering and it’s not on the table, something is amiss and everyone wonders where it is. I guess one of the reasons why it is special is because Nanny used to use homemade cheese to make the Mac and Cheese which is why we also use the best cheese presses out there along with various other tools to make the cheese at home.

Friends will come into town the day after a holiday feast and raid my fridge for Nanny’s Mac & Cheese. They don’t even ask anymore… it could be 10AM if I leave the room and come back… they will have it reheating in the oven. And I have to admit I don’t mind, there is nothing better than a cozy kitchen filled with friends and everyone’s favorite comfort food.

Nanny’s Old-Fashion Baked Macaroni and Cheese

* 2 cups elbow macaroni

* 2 large eggs

* 2 cups evaporated milk

* 2 Tb butter (melted)

* 1 tsp Worcester sauce

* ¼ teaspoon salt

* 1/8 cayenne pepper

* 2 cups (or more) grated cheddar cheese ( I use sharp cheddar cheese)

Preheat the oven to 350° F. Cook your macaroni per the box instructions. Meanwhile, beat together the eggs, evaporated milk, melted butter, Worcester sauce, salt and cayenne pepper in a bowl. Layer the macaroni and cheddar cheese in a 1 ½ quart dish – the last layer should be cheese. Pour the egg mixture over and bake for 35-40 minutes until golden brown and bubbling.

Note: Sometimes I will add a little more cayenne pepper to give it more of a kick.
