Happy Monday! I’m starting my day with this simp

Happy Monday! I’m starting my day with this simple breakfast idea I came across this weekend. So easy, though attempt #1 wasn’t very pretty (swipe left to see what I mean!). But I piled up all the overflow eggs into each tomato slice and voila! I present to you, egg in a tomato! ☺️🍳🍅
🍅Cut tomato into thick slices
🍅Carve out center and dice
🍅Whisk together with 2 eggs and season with salt and pepper (I also sprinkled in some parsley and shredded cheese)
🍅Place slices in a pan coated with cooking spray (I use avocado oil) and fill each with egg mixture
🍅Cook until done, flipping halfway
Enjoy! 😋

I’ve made it a goal to do an unassisted pull-up

I’ve made it a goal to do an unassisted pull-up almost every year now for the past 10 years. Just one, that’s all. Haven’t reached that goal yet. 🤷🏻‍♀️ This machine lets you lighten the load. You set the weight to an assisted amount, essentially reducing your body weight by that amount to pull-up. About 1.5 years ago I was 20 LBS. away from doing a pull-up on my own! SO close!! That’s the closest I’ve ever been to being able to pull up my own body weight!

This picture is me today. Today I can barely pull-up half of my body weight! In 1.5 years, I lost A LOT of my muscle and strength. 💪🏼👎🏼

Everyday Road to Healthy is about everyday life. It’s not always going to be about progress. Over the past couple of years I’ve started and restarted “getting in shape” several times. Sometimes I get frustrated and discouraged with myself, other times I give myself grace and keep reminding myself to ✨start where you are ✨and try again.

I’m not a big fan of salad, so when I do eat it,

I’m not a big fan of salad, so when I do eat it, it’s usually full of things that make it unhealthy…lots of cheese, bacon, rich, creamy dressing. You get the picture. It’s the anti-salad. 😆🥗 But this simple, healthy arugula salad has been our go-to for dinners at home recently and, not only do I really like it, but my picky 14 year old eats it as well!

✨drizzle with olive oil
✨sprinkle with oregano
✨top with shaved parmesan cheese
✨toss and enjoy!
