Healthier Pumpkin Pie

A healthy twist on a traditional fall favorite

Ingredients

  • 6 mini graham cracker crusts
  • 1 cup canned pumpkin
  • 3/4 cup greek vanilla non-fat yogurt
  • 1 egg white
  • 1 tbsp maple syrup
  • 1/2 tbsp pumpkin pie spice
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 400 degrees.
  • Mix all filling ingredients in a bowl until smooth.
  • Divide filling evenly into 6 mini pie crusts.
  • Bake at 400 degrees for 12 minutes.
  • Serve warm or cold. Store in refrigerator for up to 5 days.
