Healthier Pumpkin Pie
A healthy twist on a traditional fall favorite

- 6 mini graham cracker crusts
- 1 cup canned pumpkin
- 3/4 cup greek vanilla non-fat yogurt
- 1 egg white
- 1 tbsp maple syrup
- 1/2 tbsp pumpkin pie spice
- 1/2 tsp cinnamon
Preheat oven to 400 degrees.
Mix all filling ingredients in a bowl until smooth.
Divide filling evenly into 6 mini pie crusts.
Bake at 400 degrees for 12 minutes.
Serve warm or cold. Store in refrigerator for up to 5 days.
