Meat Free Monday: Spinach Lasagna Rolls

About a year or so ago the hubby suggested I join FA…you know, Facebook Anonymous.  Okay, I admit I Facebook a lot (isn’t admitting I have a problem the first step to recovery?).  I knew it was a “problem” when my kids started saying, “Hold on, I’m Facebooking” during their pretend play or my oldest would say, “Mommy, don’t put that picture of me on Facebook.”  So I’ve tried to limit my time on Facebook, even though I find it fascinating snooping on other people’s lives and seeing how well (or bad) they’ve aged…I kid, sort of. 

So now that I am cutting down on Facebook, I have all this free time to take up another addiction…PINTEREST!  Now the hubby is threatening to start a group called PA.  🙂  Check it out if you haven’t already.  You’ll see what I mean.

Anyway, the great thing about Pinterest is I have gotten SO many ideas for crafts (repurposed crafts = earth friendly and inexpensive) as well as tons of recipes to try.  That shouldn’t be a bad thing, right?!  And this leads me (finally) to my point….I got this recipe off Pinterest.  It looked and sounded so good that I just had to give it a try.

What I love about this recipe:  Um, everything.  It’s easy.  It’s delicious.  It looks so pretty that I actually feel like a real chef, it fits nicely in the casserole dish and it is very filling.  Oh and the ingredients are pretty basic.  Enjoy!!

Spinach Lasagna Rolls

Serves 9

Ingredients:

  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz tomato sauce
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

Directions:

    Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

    Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

    Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts.

    To serve, ladle a little sauce on the plate and top with lasagna roll.
